Ingredients:
- 300g ladyfinger biscuits (savoiardi)
- 500g mascarpone cheese
- 4 eggs, separated
- 100g sugar
- 200ml strong coffee, cooled
- 2 tbsp coffee liqueur (optional)
- Unsweetened cocoa powder for dusting
Steps:
- In a mixing bowl, beat the egg yolks with the sugar until light and creamy. Add the mascarpone and mix until smooth.
- In a separate bowl, whisk the egg whites until they form stiff peaks. Gently fold the egg whites into the mascarpone mixture.
- Combine the cooled coffee with the coffee liqueur (if using). Dip each ladyfinger into the coffee, ensuring they are soaked but not too soggy.
- Arrange a layer of soaked ladyfingers in the bottom of a rectangular dish. Spread half of the mascarpone mixture over the ladyfingers.
- Add another layer of soaked ladyfingers, then spread the remaining mascarpone mixture over the top.
- Cover and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld.
- Before serving, dust the top with unsweetened cocoa powder.
