Ingredients:

  • Pasta: 400 g of rigatoni or spaghetti.
  • Guanciale: 150 g, diced (or pancetta if unavailable).
  • Pecorino Romano: 100 g, grated.
  • Artichokes: 2-3 medium-sized, cleaned and sliced.
  • Olive oil: 2 tablespoons (optional).
  • Black pepper: Freshly cracked, to taste.
  • Salt: To taste.

Preparation:

  1. Prepare the Artichokes:
    • Clean the artichokes by removing the tough outer leaves and trimming the stems. Slice them thinly and place them in a bowl of water with lemon juice to prevent browning.
  2. Cook the Pasta:
    • In a large pot, bring salted water to a boil and cook the pasta until al dente, according to package instructions. Reserve some pasta water before draining.
  3. Sauté the Guanciale:
    • In a large skillet, heat the guanciale over medium heat until it becomes crispy and golden. If needed, add a little olive oil to help it cook, but be careful not to add too much, as guanciale renders its own fat.
  4. Add the Artichokes:
    • Add the sliced artichokes to the skillet and sauté for about 5-7 minutes, until they are tender and lightly browned.
  5. Combine Pasta and Sauce:
    • Once the pasta is cooked, add it directly to the skillet with the guanciale and artichokes. Toss everything together, adding a splash of reserved pasta water to create a creamy consistency.
  6. Finish with Cheese:
    • Remove the skillet from heat and stir in the grated Pecorino Romano. Mix well, ensuring the cheese melts and coats the pasta.
  7. Season and Serve:
    • Adjust with salt and freshly cracked black pepper to taste. Serve immediately, garnished with extra Pecorino and pepper if desired.
